Broccoli with Bacon and Dates

Broccoli with Bacon & Date Salad has renewed my faith in broccoli salads. Blanching the broccoli for just a minute or two takes away the bitterness, and rubbery texture. This salad is FAB.

WHISK

60ml/.25 EVOO

30ml/2T fresh lemon juice (Meyer preferred)

30ml/2T honey

15ml/1T white balsamic vinegar

2 cloves crushed garlic

Zest of 1 lemon

10ml/2t Dijon mustard

Freshly cracked pepper and flake sea salt to taste

 

TOSS

1920ml/8c blanched chopped broccoli (blanch for 1-2 minutes in boiling water and rinse with cold water)

300ml/1.25c crumbled goat cheese, (or feta/vegan feta cheese)

180ml/.75c chopped red onions (soaked in ice water and drained)

240ml/1c chopped bacon (v-carrot bacon)

240ml/1c toasted sliced almonds

120ml/.5c chopped dates
